Delicious! I skipped the mango chutney in the salad and used lettuce instead of spinach. I would make this again. Recipe here.

So easy. Mix leftover mashed potatos with leftover cooked carrots and brussel sprouts. Heat some olive oil and butter over medium high heat, spread the veggies in and cook until brown on both sides.

I do love to change my mind, abandon project etc, and I'm doing it again.  This will be it for now at least on Book 5.  It's too difficult to fit some of the recipes into our world full of kid, work, school etc.  There are still some I want to make, so the book will be back but now let's move on to a new one....Book 3!

Cranberry Pear Tart or Gratin

So, it's the day after Thanksgiving, and I had posted this recipe beforehand, showing the gratin but not the tart, which I planned on making for Thanksgiving.  I did go ahead and make this as a tart, which you can see came out beautiful!  And so tasty - everyone loved it.  As per my original assessment, I did add a little thickener so it would work better in the tart, but I also found that I didn't use all of the streusel, so I've adjusted the amounts below, and I didn't use all of the filling.  I'm not changing the filling, though, because you need that amount of liquid  to cook all of the pears.  Just save the extra as cranberrysauce, and that will be delicious, too.

Whether you make it as a tart or a gratin, the flavor is intense, but not as bitter as many cranberry desserts.  It seems to be adored by both those who love cranberries and those who usually don't like them, so give it a try!

For the crust   you can use either the Press-In Sablé Crust, weighted and partially baked, or you can use Sweet Pastry Crust, which is a more traditional tart crust recipe.  For this crust, roll the dough into a 13-inch round, about 1/16-inch thick. Transfer the dough to the tart pan, pressing it snugly into the bottom of the pan where it meets the edges and into the flutes of the tart pan. Roll a rolling pin over the top of the pan to cut off the excess dough. Press up on the edges to thin them out and to raise the edges about 1/16-inch (for a photo description, see Pies and Tarts Part 3. ) Refrigerate or freeze the crust for at least 15 minutes or up to 3 weeks (for long storage, place the tart in a jumbo zip-top bag).  For either crust, preheat the oven to 375 degrees F. Press a piece of greased aluminum foil snugly on top of the dough. Fill the foil with pie weights or dried beans. Bake for 15 minutes, remove the foil and beans and bake 5 minutes more, just  until the bottom crust is cooked but not brown. Set aside to cool completely.

Cranberry Pear Filling
3 cups fresh cranberries ( about 1 package)
3/4 cup sugar
2 McIntosh apples, peeled,halved and cored
3-4 firm pears, peeled and cored, cut into 1/2-inch dice and tossed with 1 teaspoon lemon juice (using 4 pears will give a little more 'tooth' to the filing)
1/2 cup brown sugar
1/2 cup fresh orange juice
1/4 cup golden raisins
1 teaspoon cinnamon
Water, as needed

1 teaspoon tapioca starch or cornstarch
2 teaspoons cold water

Streusel (Crumbs)
1/2 cup all-purpose flour, fluffed, scooped and levelled into measuring cups
1/4 cup brown sugar
1/4 teaspoon cinnamon
3 tablespoons unsalted butter, melted

Wash the cranberries and remove any soft or rotten berries. Measure out 3 cups and place in a saucepan with the sugar. Place the apples in a food processor and process as finely as possible. Add to the pot. Cook over medium-low heat until the berries release their juices, about 8 minutes. Add the pears, brown sugar, orange juice, raisins and cinnamon to the pot. Increase the heat to medium and cook, stirring occasionally, until the mixture thickens and the pears are cooked, through but still firm, about 10-20 minutes, checking every 5 minutes to make sure there is enough liquid in the pot. If the mixture does not seem to be saucy enough, add water, 1/4 cup at a time, until the mixture seems thin enough for the pears to cook and for the mixture not to scorch. ( If your pears were very hard to begin with, they will take the longer amount of time to cook). During the last minute of cooking, place the starch in a small bowl and gradually add the 2 teaspoons of water to the starch. Stir this into the cranberry mixture and boil for about 1 minute. Transfer the mixture to a bowl to cool, and then refrigerate until ready to use (can be made ahead).

For the Tart:
Preheat the oven to 375 degrees F.  For the streusel, combine the flour, sugar and cinnamon in a small bowl. Add the butter and mix with your fingers to distribute the fat. Squeeze the mixture into crumbs.  Fill the tart with the cranberry filling.

Top with the streusel, and bake at 375 degrees F. until the crumbs are browned, about 15-25 minutes. Let the tart cool at least 30 minutes before serving. The tart can be made 8 hours ahead and stored, uncovered, or loosely covered, at room temperature.

VARIATION - Cranberry Pear Gratins


For 8 gratins, you probably need half of the filling and a full recipe of the Streusel.
To make gratins, leave the thickener (tapioca or cornstarch) out of the filling.  Place about 1/2 cup filling in each of 8 mini-gratin molds (you can also use ramekins, but you get more topping with the gratin molds which are shallow and long).  Sprinkle the crumbs over the gratins and set in the oven for 15-25 minutes, just until the crumbs are nicely browned.  Let the crisps cool for at least 30 minutes before serving.

This unusual basil, peach, black pepper, Parmesan cobbler recipe started out as an innocent experiment making individual-sized cobblers, but somehow spun out of control into weird and wonderful new directions.

I was thinking about a cheese Danish, so I grated some Parmigiano-Reggiano into the batter. I was thinking about Gougères, so I added some freshly ground black pepper as well. I was thinking about a peach and basil sorbet I had one time, and decided that some of the sweet aromatic herb seemed perfectly appropriate.

The result was one of the more interesting and delicious desserts I've eaten in a long time. The flavors are subtle, but identifiable. I love, love, loved it. It may sound a little savory, but it was plenty sweet enough, and would make a memorable end to any late summer meal. I hope you give it a try soon. Enjoy!

Note Regarding Self-Rising Flour: As we said in the regular peach cobbler post, it is recommended you go out and get some self-rising flour. You can make it yourself, by adding baking powder and salt to all-purpose flour, but for whatever reason, it just doesn't seem work as well.



Ingredients:
Two 10-oz ramekins with 2 tsp melted butter in each
For the batter:
1/2 cup sugar
2/3 cup self-rising flour
2/3 cup milk
1 tbsp finely grated Parmigiano-Reggiano
pinch of black pepper
For the peaches:
1 large peach, peeled, pitted, sliced into 10-12 slices
2 tbsp sugar
2-3 torn or sliced basil leaves
1/2 tsp balsamic vinegar
1 tsp water

Sunday

We started off Sunday with toast and scrambled eggs and strawberries and blackberries.

I made a HUGE pot of pasta sauce with zucchini, onions, garlic, red bell pepper, mushrooms and spinach. There was enough to fill 9 containers for freezing.


I got our menu plan and shopping list done.


Then it was time to read.


Paxton is having his nap and I'm psyching myself up to attack the tower of laundry that's piling up. Later we'll head out for groceries and maybe a walk.

Peach Blackberry Cobbler Recipe

Peach Blackberry Cardamom Cobbler
Is there a more old-fashioned word than cobbler or cobbled? It brings to mind a shoemaker in a Hans Christian Andersen fairy tale or those stone streets in Europe (the ones that are so treacherous if you're wearing high heels). Just the word alone is quaint, charming and feels handmade. Which of course brings me to the culinary version of cobbler. A cobbler is basically sweet biscuit dough formed into tiles and 'cobbled' together on top of baked fruit. It's the kind of thing you can make year round, just varying the fruit with the season. Because it's so chilly in San Francisco in August, it's really the perfect dessert at the moment. We'll have to a while longer before making ice cream I'm afraid.

My most recent cobbler combines organically grown peaches I got from my friend Gayle who annually adopts a tree from the writer and farmer Mas Masumoto, dark as night blackberries from Driscoll's and a spice I am crazy about, cardamom. I recommend combining a couple types of fruit, it makes the cobbler prettier thanks to the contrasting colors, but also adds more texture, complex flavor and sweetness. I also recommend adding a bit of spice. If black pepper and mint had a love child, it would be cardamom. It's an exotic and aromatic spice, common in both Indian cuisine and in Nordic baking. I added a touch of it to both the fruit and the biscuit topping but it's still very subtle.

This cobbler is based on a Sara Moulton recipe. She makes a scaled down version that bakes in a one quart pan in the toaster oven (I use an 8x8 inch pan instead). It's really smart for small households because cobbler is best fresh from the oven. In fact, if you preheat the toaster oven and then get cooking I find it reaches temperature just at the point the cobbler is ready to bake.

Note: You can blanch and peel the peaches if you like, but I prefer leaving the skins on.

Peach Blackberry Cobbler
Makes 4 servings

4 peaches, cut into 1/4 inch slices
1 1/2 cup blackberries
3 Tablespoons sugar
1 Tablespoon cornstarch
1/8 teaspoon cardamom

Topping
1/2 cup flour
1 1/2 teaspoons sugar
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/4 teaspoon ground cardamom
2 Tablespoons unsalted butter
1/4 cup buttermilk plus more for the tops of the biscuits
1 teaspoon turbinado sugar

Preheat oven to 375 degrees. Combine the peaches, blackberries, cornstarch, cardamom and sugar and toss gently to combine. Transfer to an 8 inch square baking pan.

In a bowl combine the flour sugar, baking powder, baking soda, salt and cardamom. Cut in the butter using a pastry blender until the mixture resembles the texture of small peas. Stir in the buttermilk to form a soft sticky dough. Knead into a ball then turn out onto a well-floured work surface and roll to a thickness of about 1/2 inch. Use a biscuit cutter or wine glass to cut out 4 biscuits gathering the trimmings and rolling again as necessary. Arrange the biscuits over the fruit. Brush biscuits lightly with additional buttermilk using a pastry brush, sprinkle with turbinado sugar, and bake for 25 minutes or until golden brown. Serve warm with or without vanilla ice cream.

we made our own double down

This post was timely.....4 or 5 months ago. You may remember the big fuss the KFC Double Down caused - the 'sandwich' made with chicken in place of the bun?

I wanted to go and try one, but I just couldn't bring myself to do it. So instead we made our own.

I cut the chicken breasts in half through the middle, then dipped them in beaten egg while, then panko bread crumbs.  And then I baked 'em.

Meanwhile, I crisped some pancetta, and made a honey mustard sauce with honey, mustard and yogurt.  When the chicken was cooked we topped one piece with sauce, cheese (I think it was Swiss) and pancetta.  Then laid the second piece of chicken on top.
And here is the finished product.
The end result was good - the chicken was flavorful and crunchy. Pancetta is always tasty and the sauce was quite nice. It was fun to try but not something I'd make on a regular basis. How it would compare to an actual double down though, I guess I might never know.

I Love Thai Cooking

Sometimes the recipes I try from food blogs work, other times they don't. On rare occasions they are so good they become 'keepers' that I know I will cook again and again. The other night I made the Stir Fried Shanghai Noodles with Beef recipe from I Love Thai Cooking/Pranee's Thai Kitchen. It was very quick, easy and inexpensive to make and absolutely delicious! If you are looking for the way to make one steak serve two people, this is it.

The recipe uses some staple ingredients you probably already have on hand like soy sauce, oyster sauce and sesame oil. I found fresh Shanghai noodles in a two pound bag at a local Asian grocery store. I used a flat iron steak instead of flank steak and Mirin in place of the rice wine or sake so I didn't add the sugar. I also added one slivered green onion at the end of cooking. I followed the instructions pretty closely so I am not going to reprint the recipe but suggest you head to Pranee's blog to find it.

Pranee's blog has mostly Thai recipes, ingredient guides and travel posts. Learn about exotic fruit like durian and vegetables like bitter melon, find recipes for unusual dishes such as Sunflower Sprout Salad with Chili-Lime Vinaigrette. It's definitely worthy of a bookmark.

Meaty Cookbooks Part 2 -- Cooking Techniques



Yesterday I shared some new cookbooks that focus on a particular meat such as pork, brisket or goat, in today's installment I'm recommending four more books that are much more general.

One of the most anticipated cookbooks of the year was the Molly Stevens book All About Roasting. The book is amazingly comprehensive covering mostly meat--beef, lamb, pork, chicken and poultry but also fish and shellfish, vegetables and fruits. Learn how to choose the best cuts of meat, the basic roasting methods and temperatures, how to carve and more. I love that her recipes also include convection as well as conventional oven temperatures!

Recipes you'll want to try include: Quick deviled rib bones, oven roasted porchetta, one-hour rosemary rib roast, roasted buffalo wings, crispy butterflied roast chicken

Another roast focused cookbook is sure a surefire winner for Francophiles. Rotis, roasts for every day of the week. This charming book follows a certain format, Monday is roast beef, Tuesday is roast veal, Wednesday is roast chicken and game, etc. Each chapter features French and Mediterranean style recipes that generally feel very classic, though some recipes like roast pork with Earl Grey tea feel decidedly modern. While a book about meat, the vegetable sides are equally delectable.

Recipes you'll want to try include: Roast chicken with anchovies and rosemary, roast pork belly with coriander, roast pork loin with endive and orange, lamb shanks with cannellini beans, 4 ideas for stuffing chicken (Boursin cheese? hello!)

Contrary to popular opinion, farm-to-table does not just refer to zucchini. Our own local butcher extraordinaire Ryan Farr has written Whole Beast Butchery which is a visual guide to 'breaking down' beef, lamb and pork with recipes as well. If you've ever wanted to take a butchery course, this is the book for you! The tone and style of the book is much like Ryan is in person, friendly, helpful and approachable.

Recipes you'll want to try include: Beef tongue pastrami, pork belly and garbanzo soup, braised lamb shanks with curry (keep in mind, recipes are limited; this is a butchery book, not a cookbook)

If your budget is a little more quesadilla then crown roast, From the Ground Up by award-winning author James Villas is for you. The most versatile of all meat, ground meat, is featured in hundreds of recipes that use beef, chicken, pork, seafood and more. From the humble and economical meat come recipes from around the world ranging from home style sloppy joes to elegant beef tartare sandwiches. Interestingly some of the recipes use raw meat and some leftover cooked meat that is then shredded, chopped or ground.
